Mother's Chow Mein



Mother's Chow Mein

3 med onions, sliced thin 
6 ribs celery, sliced thin 
2 chicken breasts, cooked and cubed 
3 Tbsp soy sauce 
1- 14 oz can bean sprouts, drained  
2 cups reserved chicken broth from cooking chicken
2 heaping Tbsps corn starch
1/4 cup water

Combine onions, celery, chicken, bean sprouts and soy sauce in a large dutch oven. Simmer over medium low heat until vegetables are tender. Mix corn starch and water, add to vegetables and chicken, and stir until sauce is thickened and glossy. Serve with white rice and chow mein noodles. Enjoy!

Pulled Pork - NC Barbeque



North Carolina Barbeque/Pulled Pork

2 tsps red pepper flakes
3 Tbsps Worcestershire sauce
3 Tbsps yellow mustard
3/4 cup apple cider vinegar
2 1/2 - 3 lb pork loin roast

Place pork roast in crock pot. Mix first 4 ingredients and pour over pork roast. Place lid on crock pot and cook on high for approximately 5 hours, or low for 8 hours. Remove pork roast from crock pot and shred with 2 forks. Add sauce from crock pot to shredded pork and serve with cole slaw and hush puppies.
Serves 4-6

5 cups pureed tomatoes
1 & 1/2 tsps chili powder
1 & 1/2 tsps cumin
1 tsp salt
2 tsps beef bouillion powder
2 tsps dried minced onion
