QUICK FUDGIE CHOCOLATE BROWNIES


Quick Fudgie Chocolate Brownies

2 eggs      3/4 cup sugar 
1/2 cup self-rising flour
6 Tbsps melted, unsalted butter
6 Tbsps cocoa powder
1 tsp vanilla
1 cup chopped pecans or walnuts

Beat eggs, until light and foamy, add butter and mix 
to combine. Mix flour, cocoa powder and sugar, and add to egg and butter, mixing well. Add vanilla and nuts, and spread in a greased, floured 8 inch microwave safe square pan. Cook in microwave oven on high power, for approximately 6 minutes. Turn 1/4 turn halfway through cooking time to allow brownies to rise evenly. Cool on rack, cut into squares and serve plain, or with a scoop of vanilla ice cream. Enjoy!

CHOCOLATE CHIP BANANA BREAD



Chocolate Chip Banana Bread
 2 very ripe bananas
 1 box Jiffy yellow cake mix
 3/4 - 1 cup chocolate chips
 1 beaten egg

 Peel & mash bananas, then mix with beaten egg. Combine with cake mix, stirring well. Fold in chocolate chips. Pour into well greased loaf pan, and bake in a preheated 350 degree oven for 40-45 minutes. Cool in pan for 10  minutes, then finish cooling on wire rack. ENJOY!

MAKING APPLE BUTTER



Apple Butter (Makes 4 Pints) 

6 Lbs Apples ~ 2 Cups Water  
3 Cups Sugar ~ 2 Cups Splenda  
2 tsp Cinnamon ~ 1/2 tsp Cloves  
2 tsp Pumpkin Pie Spice   

Wash well, and add whole apples and water to pressure cooker and pressure on high for 15 minutes, following manufacturer's instructions. Press apples through colander, or sieve to remove core, seeds, and peel. Combine apples, spices, sugar, and Splenda. Pour into a 9" x 13" glass baking dish, and bake at 300 degrees for approximately 2 hours, until thickened, stirring every 20 minutes.  Ladle into jars, and seal in a water bath for 10 minutes. Strawberry - Blueberry Shortcake

2 1/3 cups baking mix
1/4 cup sugar
3 Tbsps melted butter or margarine
1/2 cup milk

1 quart washed, sliced strawberries with stem and leaves removed
2 cups washed blueberries
Whipped cream, Cool Whip or Reddi-Whip

Mix baking mix, melted butter, sugar and milk to soft dough. Drop by large spoonfuls onto ungreased baking sheet and bake for 10-12 minutes, or until golden brown. Cool slightly, split and fill with berries and whipped cream...ENJOY!

Mother's Chow Mein



Mother's Chow Mein

3 med onions, sliced thin 
6 ribs celery, sliced thin 
2 chicken breasts, cooked and cubed 
3 Tbsp soy sauce 
1- 14 oz can bean sprouts, drained  
2 cups reserved chicken broth from cooking chicken
2 heaping Tbsps corn starch
1/4 cup water

Combine onions, celery, chicken, bean sprouts and soy sauce in a large dutch oven. Simmer over medium low heat until vegetables are tender. Mix corn starch and water, add to vegetables and chicken, and stir until sauce is thickened and glossy. Serve with white rice and chow mein noodles. Enjoy!

Pulled Pork - NC Barbeque



North Carolina Barbeque/Pulled Pork

2 tsps red pepper flakes
3 Tbsps Worcestershire sauce
3 Tbsps yellow mustard
3/4 cup apple cider vinegar
2 1/2 - 3 lb pork loin roast

Place pork roast in crock pot. Mix first 4 ingredients and pour over pork roast. Place lid on crock pot and cook on high for approximately 5 hours, or low for 8 hours. Remove pork roast from crock pot and shred with 2 forks. Add sauce from crock pot to shredded pork and serve with cole slaw and hush puppies.
Serves 4-6

1 & 1/2 tsps chili powder
1 & 1/2 tsps cumin
1 tsp salt
2 tsps beef bouillion powder
2 tsps dried minced onion
